Blueberry White Chocolate Cookie; “Listen” to your dough

I was hesitant to put blueberries in a cookie, but I did it anyways. Ha, Ha, Ha. It actually surprised me with how good these blueberry white chocolates cookie turned out. I used fresh blueberries in the swirl and feel like that made a huge difference. The cookies were almost like little cakes…moist, sweet, and full of flavor.

I have been trying to really develop the gluten structure in my sandwich loaves. I sometimes rush the process and end up with under proofed loaves. What this means is that I need to keep the dough mixing for longer so the structure can develop and eventually pass the windowpane test. Today, I made it to windowpane with my dough. The loaves turned out really well because I was patient and actually “listened” to my dough. Imagine that!
