When baking with fresh milled flour, you quickly learn that your baked goods are more dense and might not be as pretty as they would be with all purpose flour. My bagels were a perfect example of this. In the end, if they taste good and don’t spike our T1Ds blood sugar, that’s what matters.

I decided to stick to plain bagels and not add any toppings or mix-ins so that we could keep the carb count lower. Each one of these bagels has roughly 50 g of carbs.
To continue the theme of unattractiveness, we have our pasta. LOL! Again, tastes amazing, but not the prettiest. I really enjoy making pasta and using my noodle maker machine. It effortlessly forms the firm pasta dough into any shape noodle. It speeds up the whole process.
Pasta is notorious for spiking our T1Ds blood sugar and was, at one point, completely avoided. But, when we use fresh milled flour, the spike is not as high. Another trick we use to avoid sugar spikes with pasta is waiting to bolus his insulin until after he has eaten. This allows the insulin to start working before the pasta hits his blood stream and raises his blood sugar.


Now, on to something more attractive…tortillas! Talk about fun to make. This Presa Pan is a two in one press and comal. It presses the tortilla and cooks it. A game changer! Each tortilla only needs about 30-60 seconds a side to cook. I love this recipe because each tortilla is soft and pliable.
