It was the worst of times…

8/28/2022-the day our oldest was diagnosed with Type I diabetes. A day that changed our lives forever. It has been three years since his diagnosis, but it feels like yesterday. We have learned so much, but yet have so much still to learn. The challenges that each day brings are immense. Nothing is spontaneous, everything is planned out. For some, this may sound daunting. For us, it was an opportunity to thrive. I almost felt like my life, up to that point, had been lived to prepare for this moment. But, don’t get me wrong, even with the knowledge my husband and I have, this is still hard, everyday. A teenage boy should be able to eat all the food, but instead, each morsel of carbohydrate has to be accounted for. A teenage boy should be able to sleep but instead, there are lows and highs that have to be treated, even at 2 am. When we discovered that foods prepared with fresh milled flour didn’t spike our son’s blood sugar, our world changed. So, this week we cook for him. The menu includes fresh milled sourdough pretzels, sourdough discard banana bread with fresh milled flour, cinnamon sugar sourdough muffins, sourdough discard biscuits, and of course our 2 loaves of sourdough sandwich bread for the week.
