Every year for the past 10+ years, hubs has participated in the Scott Firefighter Stairclimber in Seattle, WA. Firefighter participants, from around the World, climb 1600+ stairs in all of their gear and on air to bring awareness and donations to the Leukemia/Lymphoma society. This is a serious feat and hubs smashes it every year. He usually completes the stair-climb in 13-15 minutes. This usually puts him as one of the top 20 finishers of all the competitors. I can’t believe I didn’t think about making these sooner. Baked, fresh milled sourdough maple bars! They turned out to be so delicious. They were more like little loaves of bread rather than donuts, but delicious none the less. I will make these again for sure. I doubled the recipe and used 4 cups of flour (480g) and 1 cup (240g) of sourdough discard. I also used 1 cup of maple syrup. I was really excited to try these blueberry lemon sourdough sticks. They are essentially a brioche dough topped with a blueberry compote and then cut into sticks. Sweet, savory, and tangy all in one bite. I used 150g of discard and 360g of fresh milled flour. First up this week, we made some sourdough discard cinnamon roll muffins. These used 360g of fresh milled flour and 150g of discard. I used 200g of warm milk instead of the 165g the recipe called for knowing that the fresh milled flour absorbs more liquid. Our middle son is a bit of a foodie and received a waffle maker for Christmas. He has been asking me for waffles ever since. It took me a month, but we finally made it happen. Well, clearly I was craving fruit and chocolate this week. I came across these strawberry chocolate chip sourdough scones and knew they must be recreated with fresh milled flour. My kids love brownies. They prefer a more fudgy brownie . These lovelies were perfect. The recipe called for bittersweet chocolate and cocoa powder. I’ve been on the hunt to find the perfect recipe for buttery, flakey biscuits. A common problem with fresh milled flour products are they turn out dense and sup par. So, I was hopeful that this fresh milled biscuit recipe would be “the one”. And, it was! So yummy, buttery, and flaky. They were the perfect pairing with Hubby’s homemade chili.
