    Saturday Market Prep Has Begun!

    I am so excited, yet nervous, for my first ever Saturday Market!!!!!! May 23 is coming quickly. I have gone over and over my baking schedule and prep timing in an attempt to not overwhelm myself. I want everything to be fresh and perfect. However, I know there will be some hiccups, and that’s ok. My menu will include: sandwhich loaves, English muffins, scones, bagels, cookies, tortillas, hamburger buns, cinnamon rolls, and cinnamon toast crunch cereal.     Key lime pie cake, but cupcakes; Pretzels; Tortillas, Chocolate chip M & M cookies

    Well, the key lime pie cake from last week was a huge success. This week, we are turning them into cupcakes! I halfed the recipe and used 195g of flour. I made the graham cracker crust first, baked it for a few minutes and then added the cake mixture. These were topped with buttercream frosting, graham cracker crumbs, and lime zest. So good!     I can’t believe it… we have a 16 year old! He is our oldest of three boys and our type 1 diabetic. He doesn’t get to partake in a lot of sweet treats. So, when I asked him what he wanted for his birthday dessert, he said key lime pie. When researching recipes, I came across this key lime pie cake recipe and decided to give it a go.     My first attempt at bagel inclusions

    I have really been working hard to perfect my bagel recipe. Each time I make them, there are little tweaks I try to make them better. This go around, I am adding inclusions. Three will have blueberries and three will have strawberry powder. I have found dried blueberries that I will soak in boiling water prior to using them to rehydrate them. Then, after the initial mix I will fold the blueberries into the dough. I will do the same for the strawberry powder. Let’s see how it goes.     A year ago (3/2025) I discovered a machine that was still in the development phase looking for backers. I was sucked in and have been impatiently waiting for it to arrive.     I made some yummy fresh milled sourdough cinnamon rolls, again, this week. They are just too good! The brioche dough mixed with the stiff starter and fresh milled flour is perfection. Instead of the classic cream cheese frosting, I did a caramel glaze this week. We ran out of fresh milled sourdough hoagie rolls, so it was time to make some more.     Easter Baking: Fresh Strawberry Cake with Strawberry Buttercream Frosting; Soft and Fluffy Sourdough Dinner Rolls; Rice Krispy Cookies

    It’s time for Easter baking! We headed to my sister’s for the celebration. I was responsible for rolls and a dessert. First on tap were some Soft and fluffy sourdough dinner rolls. These called for 1 cup of active starter and 3.5 cups ( 420g) fresh milled flour. Next, on tap was the dessert.     I came across a recipe for homemade fresh milled cheesy taco pockets and had to give them a go. My kids love tacos so I was hopeful they would love these.     New Bagel Recipe; Pancake Poppers; Butterfinger Cookie

    I have tweaked my fresh milled sourdough bagel recipe, again, ever so slightly and am really pleased with the results. I decreased the amount of flour to 500g and decreased the active starter amount to 100g. I used 360g of water. Instead of just honey, I used 10g barley malt syrup and 10g honey. 10g of avocado oil was also added to the recipe. The salt amount remained the same. With these changes, the dough was more sticky.     Firefighter Stair-climb-Seattle, WA

    Every year for the past 10+ years, hubs has participated in the Scott Firefighter Stairclimber in Seattle, WA. Firefighter participants, from around the World, climb 1600+ stairs in all of their gear and on air to bring awareness and donations to the Leukemia/Lymphoma society. This is a serious feat and hubs smashes it every year. He usually completes the stair-climb in 13-15 minutes. This usually puts him as one of the top 20 finishers of all the competitors. Not bad for a 44 year old fart. We are very proud of him and can’t wait to cheer him on this…
