Homemade Fresh Milled Cheesy Taco Pockets; Fresh Milled Margherita Pizza Sourdough Focaccia; Raspberry jam Sugar Cookie.

I came across a recipe for homemade fresh milled cheesy taco pockets and had to give them a go. My kids love tacos so I was hopeful they would love these. They are basically calzones or pasties…yum!

I have always been afraid to try focaccia with fresh milled flour. The worry is that it won’t be as airy and light as it should be. I put aside the fear and tried it. I found a Margherita pizza sourdough focaccia recipe that looked amazing. I tweaked it to include fresh milled flour. It called for 500g of bread flour (3 2/3 cups). I used 150g of active starter. The liquid in the recipe was marinara sauce. No water was needed. The end result was a bit more dense than what I would have liked, but I will make this recipe again and for sure do better next time. Practice makes perfect!

The cookie this week was a raspberry jam sugar cookie. A little different from my normal cookie base. They were a nice change.
