Our middle son is a bit of a foodie and received a waffle maker for Christmas. He has been asking me for waffles ever since. It took me a month, but we finally made it happen. These fresh milled waffles were light, fluffy, full of flavor, and so easy to make. We will most certainly make them again. I measured out 240g of wheat berries for the recipe. I usually need to double recipes to feed my three growing boys, but this one actually made 8 nice sized waffles. No need to double it. I used my pancake dispenser and waffle maker to get this all done.

Grampy had some of the scones I made a few weeks back and requested I make more. So, this week, we made another round of Strawberry chocolate chip sourdough scones just for him. The recipe calls for 2.5c of AP flour. I’ll use 360g of fresh milled flour this round as I found the dough to be a bit wet last time using only 300g of fresh milled flour.

Cookie of the Week…
Can I just say that I think this is my favorite cookie of all time? This fresh milled cookies and cream cookie is soft, sweet, and full of browned butter goodness. I tweaked AK Pizza Guy’s recipe by converting the AP and bread flour to fresh milled flour. I doubled the recipe and used 1228g of fresh milled flour. Instead of using bittersweet, dark, and milk chocolate, I used Hershey’s Cookies and Cream pieces.
