Buttery Biscuits, Cheesy Crackers, Brownie Cookie…

I’ve been on the hunt to find the perfect recipe for buttery, flakey biscuits. A common problem with fresh milled flour products are they turn out dense and sup par. So, I was hopeful that this fresh milled biscuit recipe would be “the one”. And, it was! So yummy, buttery, and flaky. They were the perfect pairing with Hubby’s homemade chili. I’m really impressed with how they turned out. I used 550g of soft white wheat for this recipe. Next time, I will use a bit more as they were pretty soft and sticky. I also used 1 1/2 cups of buttermilk. You, of course, can make your own buttermilk by mixing 1 1/2 tbsp vinegar into the 1 1/2 cups of milk it calls for in the recipe.

My family loves a good cracker to snack on. Crackers are also fun to make. This week, we made cheesy sourdough discard crackers with freshly milled flour. These were awesome! Just like a cheezit but better! I used 1 cup (120g) fresh milled flour and 1/4 cup (60g) of sourdough discard. My food processor did all the work for these lovelies. It makes like so much easier to have helpful tools.
