Thanksgiving 2025 was a great success. Time with family and yummy food made for a great day. To start off the holiday, we enjoyed my sourdough fresh milled cinnamon rolls. These were made a few weeks ago and stored in the freezer until the big day. They thawed nicely and once they were warmed up, I added the icing to kick them up a notch.


For our dinner, my job was to make fresh milled yeast rolls and apple pie. The rolls were AMAZING-soft and fluffy and full of flavor. They were a perfect compliment to the turkey, roasted potatoes, and green beans. I also made these rolls ahead of time and froze them. They were taken out of the freezer on Thanksgiving and warmed up right before dinner. Absolute perfection!


With a dollop of homemade whipped cream (heavy whipping cream and Trader Joe’s vanilla bean paste whipped until stiff peaks), the apple pie was just perfect. She was a rustic pie, but I think that just adds to the experience of the day, homemade and hearty. The reduction of the macerated apple juices really did make for plump apples to fill the pie crust perfectly. I did end up changing the pie dough recipe a bit. I used 285g of fresh milled flour, added 1 Tbsp of brown sugar in addition to the 1 Tbsp of granulated sugar, used 1 stick (114g) of butter and 4 oz (115g) of cold cream cheese, added 1 tsp of cinnamon and 1 tsp vanilla bean paste, and only used 120g of cold water. It tasted great!



After the dust settled from the big day, sourdough gingerbread scones were on tap. To save my T1D kiddo some carbs, I left off the glaze. Boy were these good. Super easy to make and so cute when cut out as gingerbread men.


Cookie of the week…
The brownie cookies were a chocolate dream: just the right amount of chocolate and just the right amount of sweetness. They were soft and gooey on the inside and crisp on the outside.



Every single one of the above recipes was made using my dough mixer with ferment function. This tool mixes and ferments my dough and makes my baking so much easier. I don’t know what I did without it! Everyone should have one of these.

The biggest accomplishment of Thanksgiving day was keeping my T1D kiddo’s blood sugar pretty much in range the ENTIRE day! Even after eating the fresh milled cinnamon rolls, yeast rolls, and apple pie, on top of dosing appropriately for his carbs, he was able to enjoy the day with the rest of us. No issues at all. This is a testament to the power of fresh milled flour. Life changing!
