Ever since I made the fresh milled sourdough pretzels a couple weeks ago, my boys have been asking for BAGELS. So, this week, we are going to make some bagels. I plan to play around with cinnamon sugar and plain for now.
We will also venture into the fresh milled pasta world. I have a super easy, hearty recipe that I use and it works every time. We really like this pasta because it doesn’t spike my T1D kiddo’s blood sugar. Regular, boxed pasta caused huge spikes in his sugars and we avoided it for the first little bit after his diagnosis. Now, though, we can rely on this pasta when we want to do a pasta night. The best part about making this pasta is my pasta maker. It has made the process so much faster and the boys can help me make it. If you’ve ever made fresh milled pasta, you know it can be very thick and hard to handle. This pasta maker is battery powered and handles the dough like a champ. It also comes with different size attachments so you can choose your noodle size. It’s really fun.
A fun addition to my baking/cooking tools is the Presa Pan. It is a 2-in-1 tortilla press and comal. Instead of using a press to shape the tortilla and then a separate cast iron pan to cook the tortilla, this does it all in one step. The Presa Pan is placed directly on your stove top (gas or electric) to heat it up. Then the ball of dough is placed in the center of the pan. Close the lid, press, and cook. Super simple. I plan on using it for some corn tortillas as well as some sourdough tortillas made with fresh milled flour . And, per usual, we have our granola bars and sourdough sandwich bread to round out the week.
